Crispy griddle-fried corn tortilla tacos filled with seasoned ground beef and melted colby jack cheese.

Method
- Preheat the Griddle: Heat your griddle to 375°F and add 1 tablespoon of oil.
- Cook the Onions and Beef: Place the diced onions on the griddle and cook for 1–2 minutes. Place the ground beef next to the onions. Sprinkle taco seasoning over both. Combine the onions and beef, breaking the meat up as it cooks.
- Mix with Cheese: Once the beef is fully cooked, transfer the mixture to a glass baking dish. Immediately stir in the shredded cheese so it melts into the beef.
- Heat the Oil: Add 3 tablespoons of peanut oil to the griddle and let it heat up for 2–3 minutes while you mix the beef and cheese.
- Warm the Tortillas: Place all 16 corn tortillas in the hot oil. After 1 minute, flip each tortilla and cook the other side for 1 minute. Then flip them back to the original side.
- Fill and Fold: Add about 2–3 tablespoons of the beef and cheese mixture to each tortilla. Fold the tortillas in half to form tacos.
- Fry the Tacos: Cook each taco for 2 minutes per side, or until golden brown and crispy.
- Serve: Use the glass dish to bring the tacos inside. Add your favorite toppings and enjoy!
