Drum-smoked spiral cut ham with a sweet maple-citrus glaze and spiced brown sugar rub

- Make the Rub: Combine all spices in a bowl and mix together. Reserve 1 tablespoon and 1 teaspoon of spice mix for the glaze. Add ⅓ cup brown sugar to the remaining rub mix and combine.
- Make the Glaze: Add brown sugar, maple syrup, orange juice, apple cider vinegar, and reserved spices into a saucepan and bring to a boil. Reduce heat and simmer for 8–10 minutes. Set aside and allow to cool.
- Prep the Ham: Work open all spiral cuts on the 9.8-pound ham. Apply glaze generously to the openings using a gloved hand. Apply rub to all sides of ham surface. Put ham in fridge for 1 hour.
- Smoke Ham: Fire up smoker and aim for a temp of 250°F. Place ham on smoker and smoke for 1 hour, then rotate and smoke for another hour.
- Glaze & Finish: Place ham into a heated cast iron pan and coat with glaze. Continue smoking and recoat with glaze every 40 minutes to an hour until internal temp of 140°F is reached.
- Serve: Remove ham from smoker and let rest 5 minutes before serving.
