Sausage Scramble

A griddle-cooked breakfast scramble of redskin potatoes, sausage, onions, and eggs that can be served as-is or scooped into tortillas for breakfast burritos.

- Preheat the Griddle: Set your griddle to 375°F. As it heats, add a small amount of oil and spread out the potatoes in a single layer. Toss once in oil, then leave them alone for 10 minutes to build a crispy crust.
- Cook the Onions and Sausage: While the potatoes are cooking, add onions and suasage to a separate zone on the griddle.
- Flip Taters: After the potatoes have cooked undisturbed for 10 minutes flip them over to cook on the other side.
- Cook the Sausage: Break up sausage with your spatula cooking until fully browned and no longer pink.
- Drain and Combine: Scrape away as much sausage grease as you can. Combine half the onions with the sausage and half with the potatoes.
- Push sausage mixture into a ring shape to create a well in the center.
- Add the Eggs: Pour scrambeled eggs slowly into the center of the ring. Add salt and pepper to taste. Let the eggs start to set, add your cheese, then gently fold them all together.
- Serve: as-is or scoop into warm tortillas for breakfast burritos.
