A sweet maple-and-sugar injection for turkey.

Ingredients

½ Cup White Sugar
½ Cup Brown Sugar
½ Cup Table Salt or Kosher Salt
¾-1/2 c High Quality Maple Syrup (Can substitute with Honey), add more for a sweeter taste
6-8 Cups Warm Water
1 Thawed Turkey
Olive Oil or Avocado Oil
Favorite Seasoning/ Rub (JH Chicken Tickler/ Wassi's Turkey are my favorites)

Method

Mix warm water with sugars and salt mix to dissolve then add in Maple Syrup and mix thoroughly. If making ahead of time do not refrigerate - The injection needs to be at room temp.
Inject 1 ½-2 injectors full in the each side of the breast and inject each leg, thigh and wings. I don't believe you can over inject a turkey so don't be shy.
