Method

  1. In a bowl, whisk together honey, soy sauce, juice from 2 limes, mustard, and water. Set aside.
  2. Check the salmon fillets for pin bones and remove any you find.
  3. Coat the fillets with a little oil and season with salt and pepper.
  4. Preheat the griddle to medium heat.
  5. Cook the salmon on each side for about 3 minutes (more or less depending on how thick your fillets are).
  6. When the fillets are about 90% done, pour the honey soy glaze over them and let the sauce reduce for about a minute. Move the sauce around with your spatula to evenly reduce it.
  7. Remove the fillets and the sauce from the heat and serve with steamed asparagus, or over rice.
