  3. Mix the Coating: In a wide shallow dish or pie plate, mix the brown sugar, black pepper, chili powder/rub, and optional cayenne pepper until evenly combined.
  4. Dredge the Bacon: Lay each strip of bacon into the sugar mixture, pressing down firmly so a generous layer adheres to both sides.
  5. Arrange & Bake: Place the coated bacon strips in a single layer on the wire rack (do not overlap). Bake for 30 to 40 minutes, flipping halfway through, until the bacon is crisp and the sugar forms a bubbling, glossy glaze.
  6. Cool Immediately: Remove from the oven and let rest on the rack for 5 minutes. Transfer to parchment paper to cool completely before the sugar hardens and sticks.
