Ham Fried Rice

A savory griddle-cooked fried rice with ham, eggs, and vegetables.

- Preheat your griddle to medium high heat.
- Put some oil on the griddle.
- Start sautéing the onion and cook until onions start to get soft. Add garlic, ginger, and black pepper. Cook until fragrant.
- Next to the onions add a little more oil and the frozen peas, carrots, and the diced ham to the griddle.
- Add the cooked rice on top of the onion, garlic, and ginger mix. Toss to combine.
- When the peas, carrots, and diced ham are heated through, combine with the rice. Mix everything thoroughly.
- Melt the butter on the griddle and add the 3 eggs. Scramble until fully cooked then incorporate into the rice.
- Add soy sauce, green onions, and lemon juice to the rice. Toss to combine. Add more soy sauce to taste.
- Remove from griddle and serve warm.
