Harry Soo's basic competition BBQ dry rub, built from salt, sugar, chili/paprika, and spice.

Ingredients

4 tbsp Kosher Salt
2 tbsp White granulated sugar
2 tbsp Brown sugar
2 tbsp California Mild Chili Powder
2 tbsp Paprika
1 tbsp Ground Cumin
1 tbsp Granulated Garlic
1 tbsp Black pepper
½ tsp Cayenne pepper (use sparingly or not at all!)

Method

Combine all ingredients and mix well to make the all-purpose rub.

My four basic building blocks of rubs are: Salt, Sugar, Chili/Paprika, Spice. A BBQ dry rub is usually applied a few hours or overnight to allow flavor to penetrate the meat and create the bark.
