Method
- Slice each of the chicken breasts lengthwise. Place them on a cutting board between two pieces of parchment paper.
- Using a rolling pin, pound each of the chicken breasts until they are thin, about half of their original thickness.
- Salt the chicken to your liking and set it on a plate.
- Whisk two eggs in a bowl and set aside.
- In a separate bowl, season the panko by adding a few dashes of smoked paprika and garlic powder.
- Dip each cutlet in the egg bath and panko, and set them aside on a platter.
- Pour ½ cup of olive oil into a skillet and place it on the stove over medium to low heat.
- Once the olive oil is hot, add two pieces of breaded chicken and cook them for about five minutes on each side until they are golden brown.
- When finished, place the chicken on another platter and cook the remaining pieces.
The recipe called for plain breadcrumbs, but panko was used. The writer customized Tucci's recipe by adding smoked paprika and garlic powder to the panko. Also collected: two pieces of parchment paper, a cutting board, and a rolling pin. The chicken cutlets turned out crispy and juicy.
