Crispy roasted shiitake mushrooms with smoked paprika serve as a savory, bacon-like snack.

- Adjust oven rack to lower-middle and preheat to 400°F (200°C). In a 10-inch cast iron skillet, toss sliced mushrooms with smoked paprika, salt, pepper, and olive oil to evenly coat.
- Roast mushrooms, using tongs or a wooden spoon to toss occasionally, until very well browned and edges are crispy, 35 to 40 minutes. Serve hot or at room temperature.
Special Equipment: 10-inch cast iron skillet. Make-Ahead and Storage: Mushrooms can be sliced up to 2 days ahead and stored in a paper bag in the refrigerator. Leftover cooked mushrooms can be refrigerated in an airtight container for up to 4 days. Reheat by tossing mushrooms with a little olive oil in a skillet on the stovetop over medium-high heat, in a 400°F (200°C) oven, in an air fryer, or in the microwave.
