Turn leftovers into a fresh, satisfying meal with this crunchy ramen chicken salad. Toasted ramen noodles get tossed with everything bagel seasoning, then paired with crisp Napa cabbage, juicy apple, orange, scallions, carrot ribbons, pecans, and shredded rotisserie chicken. A tangy-sweet sesame soy dressing ties it all together for the perfect balance of salty, sweet, fresh, and crunchy.

Ingredients

Method

  1. Ramen Cabbage Salad: Place the ramen into a ziptop bag and break the noodles into 1-inch pieces with a frying pan or hammer.
  2. Heat a medium skillet over medium heat. Add 1 tablespoon neutral oil followed by the noodles. Cook, stirring constantly, until golden brown all over, 3โ€“5 minutes. Sprinkle in the everything bagel seasoning. Remove the noodles to a plate to stop cooking.
  3. To a large bowl, add the napa cabbage, apple, oranges, scallions, carrot ribbons, pecans, and chicken. Sprinkle in the cooled ramen, reserving some for garnish.
  4. Dressing: Meanwhile, combine the dressing ingredients in a mason jar and shake well to emulsify. Pour over the salad and toss well to coat. Divide onto four plates and sprinkle with the remaining ramen.
