  1. Preheat oven to 350 F.
  2. When the oven is hot, par-bake the pie crust for about 10 minutes, or until the dough is set and dry, but before it begins to color.
  3. Bring a medium pot of water to boil. When boiling, add a little salt to taste.
  4. Add the broccoli to a steamer basket or a colander that fits completely inside the pot with a lid.
  5. Cover and steam for about 2 minutes. The broccoli should turn bright green and remain crunchy. Take off the heat and set aside to cool completely.
  6. Break the eggs into a 3-cup glass measuring cup. Season with salt and pepper and whisk together.
  7. Add enough milk to the egg mixture to measure 1½ cups total liquid.
  8. Put the cooled broccoli into a bowl. Add the cheese and scallions. Pour the egg mixture into the bowl. Mix gently to combine.
  9. Put the cooled pie crust on a tray. Pour the filling into the middle of the cooled pie crust. Gently level the top with the back of a spoon or a spatula.
  10. Put the quiche into the oven and bake for 50 to 60 minutes, until the filling is set. If you love crispy edges, you can broil the quiche for an additional 2 minutes at the end. Watch carefully to make sure that it does not burn.
  11. Remove the quiche from the oven and let it cool completely before you slice it so that it has time to set.

It is so easy, and it works every time. I always make two so that I can take one to a friend's house and keep one for myself! TECHNIQUE TIPS: Put the quiche on top of a sheet tray before baking in case it bubbles over. Always grate your cheddar cheese; never buy the pre-grated cheese in the bag. SWAP OPTION: Asparagus and Gruyere, or leeks, bacon and Swiss cheese would also make a great filling. SPECIAL EQUIPMENT: A 3-cup glass measuring cup.
