Hatch Chile Verde

A bright, savory stew of slow-braised pork shoulder and potatoes in Hatch green chile sauce.

Method
- In a large skillet, add cooking oil and the cubed pork. Coat the meat with Posole Seasoning, mixing it well.
- Turn the heat to medium/medium-high and brown the pork on all sides. Once browned, remove and set aside.
- In the same skillet, add a little more cooking oil and the chopped onion, and cook until translucent.
- Add the minced garlic to the onions and cook for an extra 30-60 seconds.
- Transfer the onions, garlic and browned pork to a cooking pot and add the chicken broth, cubed potatoes and Pure Hatch Green Chile Sauce.
- Bring the pot to a boil, cover, and reduce to a simmer for about 2-3 hours. Stir at 2 hours, and leave longer if desired.
- Serve with the toppings you like and a warm tortilla on the side.
