Fireball Whiskey Caramels
jeffraben.com/recipes · No. 109
Soft homemade caramels made with Fireball whiskey.
Ingredients
Method
- Line a 9x9-inch dish with parchment paper and set it aside.
- In a 3-quart saucepan, combine butter, brown sugar, corn syrup, sweetened condensed milk, whiskey, and salt.
- Bring the mixture to a boil, cooking until a candy thermometer reaches 246°F (firm ball stage). Avoid stirring, but watch the temperature closely as it will darken during cooking. This should take about 10-15 minutes.
- Once it's ready, take the saucepan off the heat and add vanilla. Stir until smooth and bubbling stops (around 1 minute).
- Pour the caramel into your prepared dish, letting it cool for 2 to 4 hours until firm.
- Use a buttered knife to cut the caramel into 1-inch squares, wrap each piece in wax paper, and store at room temperature. Enjoy!
