Black Pepper Chicken Stir-Fry

Method

  1. Cut 3 chicken breasts into large bite size pieces.
  2. Put into a bowl with 2 teaspoons black pepper, 1 teaspoon salt, 1 tablespoon cornstarch (or flour) and stir it all together.
  3. Sear in a pan on medium high heat with 1 tablespoon of vegetable oil. Let it sit for a few minutes before touching it so it sears nicely. Toss around and let it sear for another couple minutes. It will be pretty much cooked through at this point.
  4. Drop the heat to low. Same pan, add in mushrooms, peppers, onion... all rough chopped. Cook a handful of minutes while stirring around.
  5. After 4-5 minutes add in chopped garlic.
  6. Then add 2 tablespoons of low sodium soy sauce, 2 tablespoons of oyster sauce, 1 tablespoon sesame oil, about a 1/4 cup of water (maybe a little more) and salt and pepper to taste. Let simmer for a few minutes on low heat.
* you can always add a touch more of oyster sauce if you like, just don't over do it *If you find you used a little too much water, simply let this simmer a little longer and it with thicken as it cooks. Never add too much water at once, you can always add a little more as you go if needed
