Black Pepper Chicken Stir-Fry

Bite-size chicken seared and stir-fried with mushrooms, peppers, and onion in a soy-oyster sauce.

- Cut 3 chicken breasts into large bite size pieces.
- Put into a bowl with 2 teaspoons black pepper, 1 teaspoon salt, 1 tablespoon cornstarch (or flour) and stir it all together.
- Sear in a pan on medium high heat with 1 tablespoon of vegetable oil. Let it sit for a few minutes before touching it so it sears nicely. Toss around and let it sear for another couple minutes. It will be pretty much cooked through at this point.
- Drop the heat to low. Same pan, add in mushrooms, peppers, onion... all rough chopped. Cook a handful of minutes while stirring around.
- After 4-5 minutes add in chopped garlic.
- Then add 2 tablespoons of low sodium soy sauce, 2 tablespoons of oyster sauce, 1 tablespoon sesame oil, about a 1/4 cup of water (maybe a little more) and salt and pepper to taste. Let simmer for a few minutes on low heat.
* you can always add a touch more of oyster sauce if you like, just don't over do it
*If you find you used a little too much water, simply let this simmer a little longer and it with thicken as it cooks. Never add too much water at once, you can always add a little more as you go if needed
