Ingredients

Method

  1. Heat sesame oil in a large pan or wok, and add the onion - stir until just softened, 3 to 4 minutes
  2. Add the garlic, ginger and a teaspoon or so neutral oil, then stir until fragrant, about a minute
  3. Add the ground meat and cook until the color is gone, then add the hoisin, ketchup, rice vinegar, soy, brown sugar & chili crisp
  4. Stir everything really well, and simmer 3-4 minutes
  5. Add the cilantro and green onion, mix and serve on the toasted buns with the crispy shallots
  6. Crispy Shallots: Slice shallots super thin, and mandoline works great, put in a large bowl and toss with the flour
  7. Heat about an inch and a half of oil in a medium pot to 350 degrees
  8. Combine salt & 5 spice in a small bowl - mix well
  9. Shake off excess flour from shallots, and carefully put in the oil
  10. Stir to separate and cook until they just start turning golden brown - it can happen fast so get ready to remove to paper towels, then dust with the 5 spice salt
